A pinch of salt, normally an afterthought to add to a meal and even taken as an insult by many chefs, has now got a new role to play at the dinner table.
The Head Chef at the oh so trendy Armani/Aqua has travelled the world to bring us Hong Kongers a whole different dimension to this trusty condiment. He has created a decadent tasting menu, comprised of six courses partnered with seven unique salts. Each salt has been carefully sourced from the remote corners of the earth (for example the Hoarfrost salt used comes from a single cave in the Sahara desert) to perfectly enhance the natural flavours of each dish.
In keeping with Armani/Aqua’s “couture meets cuisine” motto, the salt rocks are more reminiscent of a precious jewel than any table salt we’ve seen and every dish is exquisitely presented – with special note to the three Botan prawns served on a block of pink Himalayan Salt that wouldn’t look out of place in an art show. As for the taste? Each salt transformed the flavour of the dish, whilst managing not to overpower it and the smaller portions left us eager for more.
From the duck foie gras with Viking Java Mix Salt to the Black Angus strip loin with Saharan Hoardfrost Salt, each course taught us that sometimes we need to take life with a pinch of exotic salt (or two!)
