Thailand’s most expensive menu has an impressive story to tell

No sooner did we think we’ve seen it all, than the trailblazers at Aziamendi and Iniala pull their ace card – a 50,000 THB per person dinner curated to turn fine dining into a complete sensory experience. Chef de Cuisine, Alex Burger, takes guests on an interactive dining experience, starting in the art gallery of the resort and through the garden (where you can expect some treats on the way) and ending in the world-renowned restaurant. With canapés plucked straight from a bonsai tree, firefly squid flown-in from Japan and cooking techniques that would impress even the most well-versed diner, you certainly get bang for your baht. Dishes include items such as ‘5J Jamon cut at the table’, ‘Truffled Egg’, ‘Foie Gras Ashes’ and ‘Petit Fours of White Chocolate with Mint and Cloud’. Chef de Cuisine Alex Burger of New York and Chef Eneko Atxa have worked together to create an extraordinary menu using Basque technique fused with Thai ingredients, presenting an entirely new roving dining concept.

The food however is only part of the experience. Head Sommelier, Fabien Etienne is not quite content with his recent accolades (including ‘Best Wine List in Thailand’) and has set out to steal the show with an impressive array of fine and vintage wines. Each wine has been sourced from around the globe to complement each course, and although Fabien is clearly begrudged to part with them (many are the only bottle in his collection), his passion for each perfectly paired glass is evident.

Together the team has created something that is so much more than fine dining. Every ingredient has been carefully thought out and ethically sourced, each course has a story – often with accompanying props such as smoking scented centrepieces. Finally, and perhaps most importantly, the menu has a cause with 5% of the revenue going towards The Inspirasia Foundation, an organisation which helps local non profit organisations focused on core health, disability, education, and disaster relief.

And you’re heading to Phuket to taste this feast for yourself you may as well book yourself into the island’s coolest celebrity hangout – Iniala Beach House. Just a short drive from Phuket airport, the resort has three beautifully-appointed villas (each with three suites and all with a very individual design), one extraordinary penthouse suite and a kids hotel capable of making any adult regress, the resort is set to impress.
